So OBVIOUSLY today is not Cinco de Mayo- it’s May 4th. Also known as Star Wars day. (May the Fourth be with you… get it???) One of my favorite food holidays. I have a confession guys- I can eat chips and salsa for DAYS. The guac from Chipotle?? Forget about my meal. I’ll take a burrito of THAT and a gigantic bag of chips. #noshame
I don’t know if you know this about me, but I seriously love Mexican food. Tacos, enchiladas, flautas, burritos, queso dip, … ALL of the food. There’s something simplistic and delicious about Mexican cuisine and while I don’t really celebrate the ACTUAL meaning of Cinco de Mayo (but read about it here– sorry French friends!!!), I DO eat Mexican food every year on this date.
Additionally, I like to dress as if I were running around on vacation down in Mexico.
Hey, a girl can dream, right? 😉 At least the crazy humidity in the air was making me feel as if I was in Mexico. Ooof, it was brutal! (My poor hair did NOT like it.)
Ian and I had a fantastic trip to Mexico a looooooong time ago. It was our first trip together, and I will always have fond memories of it. We’re the “activities” kind of people – go to ancient ruins, swim at Xel-Ha (coolest thing ever), rent 4wheelers and jet skiis, etc. Chilling on the beach is cool, but we love to DO stuff on vacation.
Dang. Now I want to go on vacation.
Sigh. Well it looks like the best I can do is eat some delicious and authentic Mexican food and practice my spanish.
